Healthy Hamburger Bone Broth Soup
My husband craves meat on the daily, while I'm more of a veg head, so to satisfy both of our needs, I make a big pot of this delicious, nutritious, and health-full soup for quick lunches, or dinners during the week. He gets the ground beef, I get as much veg as I want (or have in the fridge), and adding just a bit of whole grain to the soup helps to keep from needing absolutely anything else other than a big bowl of this grounding goodness!
Healthy Hamburger Bone Broth Soup
Serves 6
Ingredients:

1 pound grass-fed, organic ground beef

1 medium onion, chopped

dash of Worcestershire sauce

3 gloves garlic, minced
-
3 medium carrots, cut into rounds

3 stalks of, celery chopped
-
1 28oz can diced or crushed organic tomatoes- try to find BPA-free lined cans in the natural food isle

1/3 cup uncooked quinoa
-
4 cups High-Vibe beef or bison bone broth
-
¼-½ teaspoon sea salt- more or less depending on if there’s any salt in the canned tomatoes, and to your personal taste

1/4 teaspoon pepper
-
1/4 teaspoon dried oregano
-
1 teaspoon dried parsley
-
Optional* - 1 cup cut fresh or frozen green beans, 1 zucchini chopped into quarter moons and/or a handful of chopped mushrooms
Directions:
In a large, heavy bottomed saucepan, brown beef with chopped onion until onion is translucent, about 8 minutes, then add a couple shakes of Worcestershire sauce & stir to combine. Add the next 10 ingredients, bring to a boil, reduce heat, and cover and simmer for 15 minutes or until quinoa and carrots are tender.
Optional* - Add the green beans, zucchini, mushrooms- or all of them!
Cover and simmer 5-10 minutes longer, or until the veggies are tender.
Soup should be somewhat thick, but if you like your soups more “brothy”, simply add another cup or 2 of bone broth to the recipe!
